Greek Meatballs In Wine Sauce

Ingredientes

  • 3/4 lb grnd lamb
  • 3/4 lb grnd beef or possibly grnd veal
  • 1 sm yellow-skinned onion chopped, or possibly grated with hand grater A handful flat-leaf parsley minced Coarse salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. butter
  • 1 Tbsp. extra-virgin extra virgin olive oil (1 turn of the pan)
  • 1 c. dry white wine
  • 1/2 x lemon

Direcciones

  1. Preheat a medium skillet over medium-high heat.
  2. Combine meats, onion, parsley, salt, and pepper. Add in butter and oil to pan and begin rolling small, bite-size balls, adding balls to pan as you roll them. Cook balls 10 to 12 min, shaking pan occasionally to brown equally on all sides.
  3. Deglaze pan with wine and allow wine to reduce by half, 1 or possibly 2 min. Remove pan from heat and squeeze the juice of 1/2 lemon over the meatballs.
  4. Serve in a bowl.
  5. This recipe yields 4 servings.
