%20of%20ostrich%20to%20other%20popular%20meats.%3C/p%3E%3Cp%3Eper%203%20oz.%20meat%3C/p%3E%3Cp%3ECalories%3C/p%3E%3Cp%3EProtein%3C/p%3E%3Cp%3EFat%3C/p%3E%3Cp%3ECholesterol%3C/p%3E%3Cp%3EOstrich%3C/p%3E%3Cp%3E97%3C/p%3E%3Cp%3E22%3C/p%3E%3Cp%3E2%3C/p%3E%3Cp%3E58%3C/p%3E%3Cp%3EChicken%3C/p%3E%3Cp%3E140%3C/p%3E%3Cp%3E27%3C/p%3E%3Cp%3E3%3C/p%3E%3Cp%3E73%3C/p%3E%3Cp%3ETurkey%3C/p%3E%3Cp%3E135%3C/p%3E%3Cp%3E25%3C/p%3E%3Cp%3E3%3C/p%3E%3Cp%3E59%3C/p%3E%3Cp%3EBeef%3C/p%3E%3Cp%3E240%3C/p%3E%3Cp%3E21%3C/p%3E%3Cp%3E15%3C/p%3E%3Cp%3E77%3C/p%3E%3Cp%3EPork%3C/p%3E%3Cp%3E275%3C/p%3E%3Cp%3E24%3C/p%3E%3Cp%3E19%3C/p%3E%3Cp%3E84%3C/p%3E%3Cp%3EObviously,%20this%20is%20a%20little%20skewed,%20because%20you%20can%20get%20lower%20fat%20ground%20beef%20and%20pork.%20But,%20you%20can%20see%20that%20regardless%20ostrich%20is%20a%20very%20healthy%20meat.%20Because%20it%E2%80%99s%20sold%20by%20small%20farmers,%20it%E2%80%99s%20also%20usually%20hormone%20and%20antibiotic%20free.%3C/p%3E%3Cp%3EWhen%20we%20first%20started%20eating%20ostrich%20burgers,%20I%20though%20it%20would%20be%20fun%20and%20informative%20to%20do%20a%20comparison%20taste-test.%20I%20made%20turkey%20burgers,%20ostrich%20burgers%20and%20one%20that%20was%20half%20and%20half%3C/p%3E%3Cp%3EThe%20turkey%20burgers%20are%20on%20the%20top,%20the%20pure%20ostrich%20burger%20is%20on%20the%20bottom%20left,%20and%20the%20mixed%20one%20is%20on%20the%20bottom%20right.%20I%20knew%20from%20the%20get-go%20that%20ostrich%20tastes%20best%20when%20cooked%20medium-rare,%20and%20that%20would%20be%20a%20problem%20with%20the%20mixed%20burger%20(since%20turkey%20must%20be%20cooked%20to%20at%20least%20160-degrees),%20but%20decided%20to%20go%20ahead%20anyway%20and%20just%20cook%20that%20burger%20longer.%20I%20was%20really%20surprised%20that%20we%20liked%20the%20ostrich%20burger%20the%20best,%20the%20mixed%20one%20(even%20though%20it%20was%20cooked%20through)%20second%20best%20and%20the%20turkey%20burger%20the%20least.%20It%20just%20seemed%20to%20have%20so%20much%20less%20flavor%20than%20the%20ones%20with%20ostrich,%20and%20the%20texture%20wasn%E2%80%99t%20as%20firm%20either.%20I%20cooked%20the%20first%20ostrich%20burger%20rare-ish%20(140%20degrees),%20which%20we%20didn%E2%80%99t%20like%20as%20much%20as%20the%20ostrich%20that%20was%20medium-rare%20(about%20150%20degrees%20).%20I%E2%80%99m%20sure%20if%20you%E2%80%99re%20used%20to%20rare%20meat,%20you%E2%80%99d%20find%20the%20rare%20ostrich%20just%20fine,%20but%20since%20we%20are%20used%20to%20fully%20cooked%20turkey,%20it%20was%20a%20bit%20of%20a%20shock%20to%20us.%20In%20any%20case,%20I%20cooked%20the%20burgers%20on%20my%20Cuisinart%20Griddler%20and%20the%20ostrich%20exuded%20a%20lot%20of%20juice,%20which%20I%20removed%20by%20tilting%20the%20Griddler%20so%20the%20juice%20could%20flow%20out%20and%20into%20the%20cup%20that%20comes%20with%20it.%20I%20had%20to%20do%20this%20so%20that%20the%20burgers%20wouldn%E2%80%99t%20steam.%20A%20cast%20iron%20pan%20might%20have%20been%20better,%20but%20mine%20was%20all%20rusty,%20so%20this%20was%20the%20best%20choice%20available%20(without%20using%20oil%20in%20another%20pan).%20The%20ostrich%20was%20done%20in%20less%20than%203%20minutes,%20and%20the%20turkey%20took%20about%203-1/2-4.%20Very%20quick%20and%20very%20tasty!!%3C/p%3E%3Cp%3EThe%20following%20recipe%20was%20adapted%20from%20a%20Bon%20Appetit%20recipe%20published%20in%201990.%3C/p%3E%3Cp%3EMix%20all%20of%20the%20ingredients%20together%20and%20chill%20until%20ready%20to%20grill%20the%20burgers.%20Leave%20the%20sauce%20at%20room%20temperature%20when%20you%20start%20to%20make%20the%20burgers.%3C/p%3E%3Cp%3ECook%20the%20burgers%20to%20desired%20done-ness.%20Serve%20with%20sauce,%20lettuce%20cucumbers,%20etc.%20on%20buns%20of%20your%20choice%20(we%20use%20low-fat%20whole%20grain%20buns)%3C/p%3E){kind=link}
