Ingredientes

  • 2 lb red Bliss potatoes boiled, quartered
  • 1 med red onion halved, and sliced into half moons
  • 2 x scallions thinly minced
  • 24 x Kalamata olives pitted, halved
  • 1 Tbsp. finely-minced dill
  • 1 Tbsp. finely-minced fresh oregano
  • 2 ounce extra virgin olive oil
  • 1/2 ounce red wine vinegar
  • 1 x lemon juiced Kosher salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In a medium salad bowl, combine the potatoes, onions, scallions, olives, dill, and oregano.
  2. In a small bowl whisk together the extra virgin olive oil, red wine vinegar, lemon juice, salt, and pepper.
  3. Pour over the salad and mix well. Chill till ready to serve.
  4. This recipe yields 4 to 6 servings.
