Ingredientes

  • 2 tsp Extra virgin olive oil
  • 1 tsp Dry oregano
  • 1 lrg Garlic clove, chopped
  • 3 c. Diced tomato
  • 1/2 c. Sliced green onions
  • 1/4 c. Minced fresh parsley, divided
  • 2 Tbsp. Lemon juice
  • 4 c. Warm cooked thin spaghetti (8 ounces uncooked pasta)
  • 1 c. Crumbled feta cheese, (4 ounces) divided Freshly grnd pepper Lemon slices, (optional) Green onions, (optional)

Direcciones

  1. Heat oil in a large nonstick skillet over medium-high heat. Add in oregano and garlic; saute/fry 30 seconds. Add in tomatoes, green onions, 2 Tbsp. parsley, and lemon juice; cook 2 min or possibly till thoroughly heated.
  2. Combine tomato mix, spaghetti, and 3/4 c. cheese; toss gently. Top with remaining cheese and parsley, and serve with pepper.
  3. Yield: 4 servings
  4. (serving size: 1-1/4 c.).
  5. Serving Ideas : Garnish with lemon slices and green onions, if you like.
