Ingredientes

  • 1 lrg head romaine lettuce, washed, liquid removed and torn into bite-size pcs
  • 1 med English cucumber, trimmed, peeled and sliced
  • 4 x vine-ripened tomatoes, cut into wedges
  • 1 sm green bell pepper, cored and seeded, cut into rings
  • 1/2 sm red onion, peeled and cut into rings
  • 12 x - 16 kalamata olives
  • 6 x -8 ounces feta cheese, crumbled
  • 1/2 c. extra virgin olive oil, plus 1-2 tsp.
  • 1 x -2 tsp. strained juice of 1 lemon Garlic salt to taste
  • 1 Tbsp. dry oregano Freshly grnd black pepper Sprigs of Italian parsley for garnish

Direcciones

  1. Arrange romaine on platter. Place cucumbers on top of lettuce. Arrange tomatoes on top of cucumbers; top with green pepper rings, onion and olives.
  2. Place cheese in center of salad.
  3. In small bowl, combine 1/2 c. extra virgin olive oil, lemon juice and garlic salt; stir to combine. Drizzle over salad. Drizzle remaining 1-2 tsp. extra virgin olive oil on cheese and sprinkle oregano on top of cheese. Season entire salad with pepper and garnish with sprigs of parsley.
