Greek Style Tofu Salad

Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 1/4 c. red wine vinegar
  • 1 tsp kosher salt or possibly regular salt
  • 1/2 tsp black pepper
  • 1 Tbsp. sliced fresh basil leaves
  • 1/2 tsp dry oregano
  • 1 lb extra-hard water-packed tofu liquid removed and cut into 1/2-inch cubes
  • 1 ounce lowfat feta cheese crumbled
  • 1 lrg cucumber peeled and sliced Or possibly 2 medium
  • 1 sm red onion thinly sliced
  • 4 ounce canned pitted black olives liquid removed

Direcciones

  1. MAKES 6 SERVINGS. LACTO
  2. In a large bowl, combine oil, vinegar, salt, pepper, basil and oregano; whip with fork till slightly thick. Add in tofu cubes and marinate 1 hour, stirring occasionally.
  3. Add in all other ingredients, toss lightly and serve.
  4. Makes 6 servings.
  5. NOTES : This salad is wonderful! I didn't expect it to be great, so now I'm wondering why I even decided to try it. The tofu is uncooked and I thought I would not like which, but the marinade makes the tofu very flavorful. We will definitely make this again. I skipped the oil and used a total of 6 Tbsp. of seasoned red wine vinegar. I used fat-free feta and reduced fat White Wave tofu. It is very quick to combine. Kathleen
