- Cook pasta according to package directions. Drain and cover to keep hot; set aside.
- Meanwhile, in a large bowl, combine cooked vegetables, tomatoes, olives, chickpeas, parsley, oil, and black pepper.
- Add in the warm cooked pasta to the large bowl and toss well. Top with feta cheese and serve hot.
- This recipe yields 2 servings.
- Comments If you couldn't find a 7 3/4-oz can of chickpeas and had to buy a larger one, toss any extra chickpeas on a salad.
