Ingredientes

  • 1 Tbsp. Butter or possibly margarine
  • 1 lrg White onion, minced
  • 1/3 c. Minced white part of green onions or possibly shallots
  • 2 Tbsp. All purpose flour
  • 1 c. Reduced-sodium chicken broth
  • 1/4 c. Skim lowfat milk
  • 1/4 tsp Grnd white pepper
  • 2 Tbsp. Extra virgin olive oil
  • 3 med -size leeks, white part only, rinsed & sliced
  • 1/4 c. Unsifted all purpose flour
  • 1 can (14 1/2 or possibly 13 3/4 ounce) reduced-sodium chicken broth
  • 1 c. Minced green onion tops
  • 1 c. Skim lowfat milk
  • 1/4 tsp Salt Minced chives,, (opt)

Direcciones

  1. Note: A variety of onions forms the basis of this flavorful soup. To create a swirled pattern in the green soup, use the itp of a knife to draw the white soup through the green soup.
  2. Prepare White-Onion Soup: In 2 qt saucepan, heat butter. Add in onion and white part of green onions; saute/fry 5 min. Stir in flour till well mixed. Add in broth and heat to boiling, stirring constantly, till thickened.
  3. Stir in lowfat milk and pepper; set soup aside.
  4. Prepare Green-Onion Soup: In 3-qt saucepan, heat oil. Add in leeks; saute/fry 5 min. Cover and cook leeks over low heat 15 min or possibly till tender, stirring occasionally.
  5. Sprinkle leeks with flour and stir till well mixed. Stir in broth and heat to boiling. Add in green onion tops; cook 1 minute. Remove from heat; stir in lowfat milk and salt.
  6. In blender, puree White-Onion soup till smooth; return to saucepan and set aside. In blender (no need to wash), puree Greeen-Onion Soup till smooth.
  7. Return to saucepan. (Both soups can be made ahead, covered and refrigerated.)
  8. Just before serving, reheat soups just till warm. To serve, ladle green soup into bowls and spoon white soup in the center. Sprinkle with chives, if you like. Serve immediately.
