,%20it's%20also%20making%20me%20crave%20anything%20with%20vitamin%20C.%20I've%20been%20tearing%20open%20packets%20of%20Emergen-C%20and%20sucking%20down%20orange%20juice%20like%20it's%20about%20to%20disappear%20from%20supermarket%20shelves%20at%20any%20moment.%20I%20really%20wish%20I%20still%20had%20the%20blood%20orange-%20and%20green%20bean-laden%20salad%20I%20made%20for%20New%20Year's%20Eve.%3C/p%3E%3Cp%3EIt%20was%20refreshing%20and%20delicious%20with%20a%20nice%20mix%20of%20tart%20and%20sweet%20and%20clearly%20chock-full%20of%20vitamin%20C%20from%20the%20red-hued%20blood%20oranges%20and%20even%20the%20green%20beans.%20Regardless%20of%20whether%20you're%20sniffly%20and%20achy,%20I%20recommend%20that%20you%20make%20this%20salad.%20It's%20often%20hard%20for%20me%20to%20think%20up%20a%20good%20winter%20salad,%20as%20so%20many%20of%20my%20favorite%20fruits%20and%20vegetables%20like%20tomatoes%20and%20corn%20aren't%20very%20tasty%20in%20the%20winter,%20but%20luckily%20blood%20oranges%20and%20green%20beans%20still%20are.%3C/p%3E%3Cp%3EI%20know%20a%20lot%20of%20people%20have%20resolutions%20to%20eat%20healthier%20or%20to%20include%20more%20fruits%20and%20vegetables%20in%20their%20diets,%20and%20this%20salad%20makes%20it%20really%20easy%20to%20do%20that.%3C/p%3E%3Cp%3EThe%20salad%20is%20a%20cinch%20to%20throw%20together%20save%20one%20time-consuming%20step:%20sectioning%20the%20blood%20oranges.%20Since%20I%20was%20preparing%20a%20bunch%20of%20other%20things%20for%20our%20New%20Year's%20Eve%20gathering,%20I%20asked%20my%20boyfriend%20if%20he%20would%20try%20sectioning%20the%20oranges.%20I%20plopped%20down%20the%20December%20issue%20of%20Bon%20Appetit%20(I%20found%20the%20recipe%20in%20Food%20&%20Wine%20but%20used%20the%20tips%20from%20Bon%20Appetit),%20which%20shows%20exactly%20how%20to%20cut%20away%20the%20peel%20and%20pith%20in%20the%20Prep%20School%20section,%20and%20a%20big%20pile%20of%20oranges%20in%20front%20of%20him,%20and%20he%20graciously%20took%20on%20the%20task.%3C/p%3E%3Cp%3EHe%20first%20had%20to%20cut%20the%20tops%20and%20bottoms%20off%20the%20oranges%20and%20then%20cut%20off%20the%20peel%20and%20pith,%20curving%20the%20knife%20to%20follow%20the%20shape%20of%20the%20fruit.%3C/p%3E%3Cp%3EThen%20he%20had%20to%20cut%20in%20between%20the%20membranes%20to%20separate%20out%20the%20segments.%3C/p%3E%3Cp%3EIf%20you're%20short%20on%20time,%20you%20could%20just%20peel%20the%20orange%20and%20pull%20apart%20the%20sections,%20but%20the%20orange%20pieces%20won't%20look%20quite%20as%20pretty%20and%20bold%20in%20the%20salad.%3C/p%3E%3Cp%3EGreen%20Bean%20and%20Blood%20Orange%20Salad%20(adapted%20from%20Food%20&%20Wine,%20December%202009)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ECook%20green%20beans%20in%20a%20large%20pot%20of%20boiling%20salted%20water%20for%20about%205%20minutes%20--%20just%20until%20they%20turn%20bright%20green.%20Drain%20them%20and%20then%20immediately%20plunge%20them%20in%20an%20ice%20bath.%20Drain%20them%20again%20and%20pat%20them%20dry.%3C/p%3E%3Cp%3EMeanwhile,%20peel%20and%20section%20four%20of%20the%20oranges,%20removing%20all%20of%20the%20pith.%20Zest%20one%20of%20the%20remaining%20oranges%20and%20juice%20both%20of%20them.%20Transfer%20the%20juice%20to%20a%20saucepan%20and%20add%20the%20vinegar%20and%20honey.%20Bring%20mixture%20to%20a%20boil,%20and%20then%20simmer%20over%20moderate%20heat%20until%20reduced%20to%20a%20syrup,%20about%2010%20minutes.%20Season%20with%20salt.%3C/p%3E%3Cp%3EPlace%20green%20beans%20and%20orange%20sections%20in%20a%20large%20serving%20dish,%20and%20drizzle%20the%20syrup%20on%20top.%20Garnish%20with%20the%20orange%20zest,%20and%20serve.%3C/p%3E%3Cp%3EI%20recommend%20making%20this%20just%20before%20you%20plan%20to%20serve%20it,%20so%20it%20looks%20its%20best.%20I%20ate%20the%20leftovers%20for%20a%20few%20days%20afterward,%20and%20while%20they%20still%20tasted%20great,%20the%20salad%20didn't%20look%20quite%20as%20vibrant.%20And%20something%20else%20I%20discovered%20while%20eating%20the%20leftovers%20--%20a%20little%20feta%20does%20not%20hurt%20this%20salad%20at%20all!%3C/p%3E){kind=link}
