Green Bean And Spinach Frittata

Ingredientes

  • 1 tbsp. extra virgin olive oil
  • 1 med. onion, diced
  • 1 chopped garlic clove
  • 3 c. diced cooked potato
  • 2 c. minced, cooked green beans
  • 1 c. frzn, minced spinach (or possibly 2 c. fresh minced spinach)
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 4 egg whites and 2 whole Large eggs (or possibly egg substitute equivalent of 4 Large eggs)
  • 3/4 c. evaporated lowfat milk
  • 1/2 c. grated Parmesan cheese

Direcciones

  1. Heat oil in medium pan. Saute/fry onions and garlic till translucent/soft. Add in the herbs, other vegetables, and potatoes. Beat the Large eggs or possibly egg substitute together with lowfat milk. Spray a 9x13 inch baking pan with non-stick coating. Pour egg mix into pan. Spoon vegetable mix on top and sprinkle with cheese. Bake at 350 degrees for about an hour or possibly till set. Remove from oven and cut into squares. Serves 6.
