Green Bean Walnut & Feta Salsa

Ingredientes

  • 1 1/2 lbs. fresh green beans, cut in half
  • 3/4 c. extra virgin olive oil
  • 1/2 c. packed mint leaves
  • 1/4 c. white vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon grnd pepper
  • 1/2 teaspoon chopped garlic
  • 1 c. minced walnuts
  • 1 c. diced red onion
  • 1 c. crumbled feta cheese

Direcciones

  1. Bring 4 qts of water to boil. Add in green beans; cook till tender-crisp about 4 min. Drain well and immerse in ice water. Drain and pat dry.Finely chop mint leaves. Put together mint, oil, vinegar, salt, pepper, garlic in processor and blend well. Chill.
  2. Arrange beans in shallow glass serving bowl. Sprinkle with nuts and onions. Just before serving, pour dressing over and toss.
