- Bring 4 qts of water to boil. Add in green beans; cook till tender-crisp about 4 min. Drain well and immerse in ice water. Drain and pat dry.Finely chop mint leaves. Put together mint, oil, vinegar, salt, pepper, garlic in processor and blend well. Chill.
- Arrange beans in shallow glass serving bowl. Sprinkle with nuts and onions. Just before serving, pour dressing over and toss.
