Green Bean & Walnut Salad

Ingredientes

  • 1 1/2 pound fresh green beans
  • 1/2 c. fresh mint leaves
  • 3/4 c. extra virgin olive oil
  • 1/4 c. white wine vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon crushed garlic
  • 1 c. coarsely minced walnuts
  • 1 c. red onion slices
  • 1 c. feta cheese, crumbled

Direcciones

  1. Blanch green beans for 4-5 min. Chill. Chop mint leaves. Add in to green beans. Set aside.
  2. For Dressing: Combine oil, vinegar, salt, pepper and garlic. Add in walnuts, red onion and feta cheese to beans. Pour dressing over bean mix and toss to coat. Refrigeratetill ready to serve. Serves 4-6.
