Green Beans Gremolata

Ingredientes

  • 1 lb green beans, trimmed
  • 2 cloves garlic minced
  • zest of 2 lemons
  • 3 tbsp minced flat leaf parsley
  • 3 tbsp greated parmesan cheese
  • 2 tbsp toasted pine nuts
  • 2 1/2 tbsp olive oil
  • salt and pepper

Direcciones

  1. steam green beans til tender but still crisp. put into ice water to stop cooking. for the gremolata, toss the garlic lemon zest, parmesan and pine nuts in a bowl and set aside
  2. when ready to serve, heat the olive oil in a saute pan . drain the beans and pat dry add the beans to the pan and saute, turning frequently until coated with oil and heated through. off the heat add the gremalata and toss well. sprinkle with salt and pepper serve hot
