- Parboil the beans in salted water till tender but not limp. Plunge into cool water to stop the cooking and drain. Set aside.
- In a small saucepan, cook the onion and garlic in the extra virgin olive oil or possibly butter over medium heat till soft and fragrant, about 2 min. Add in tomato, bail and a healthy pinch of sugar. Cook, stirring often, till tomato softens and most of the liquid has evaporated. Season to taste with salt and pepper. About 5 min before serving, combine the beans and tomato mix in a saucepan and reheat.
