Ingredientes

  • 2 lb green beans ends and strings removed, rinsed - (see comments)
  • 2 Tbsp. extra virgin olive oil
  • 2 c. thinly-sliced onions
  • 1 can diced tomatoes with Italian seasonings (28 ounce) Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In a 5- to 6-qt pan over high heat, bring 3 qts water to a boil. Add in beans and cook till tender to bite, 5 to 6 min. Drain beans and immerse in ice water till cold, about 3 min; drain again.
  2. Pour extra virgin olive oil into same pan over medium-high heat; add in onions and stir often till limp, about 8 min. Add in tomatoes with liquid; stir occasionally till sauce is reduced to about 2 1/2 c., about 10 min. Add in beans and stir occasionally till warm, about 5 min. Season to taste with salt and pepper.
  3. This recipe yields 10 to 12 servings.
  4. Comments: Luciano prefers Blue Lake beans for this simple recipe from his grandmother. Up to 1 day ahead, cook beans and make sauce; refrigerateseparately, airtight. Reheat together.
