Ingredientes

  • 1 lb Beans (blue lakes, yellows, haricot verts)
  • 1 Tbsp. Walnut oil
  • 1 Tbsp. Extra virgin olive oil
  • 1 x Shallot, finely diced
  • 1 tsp Fresh tarragon, chopped
  • 4 x New-crop walnuts, cracked and broken into quarters Salt and pepper Tarragon vinegar =Or possibly=- Champagne vinegar (to taste)

Direcciones

  1. TIP STEM ENDS OF BEANS. Bring 4 qts water to boil and add in 1 1/2 Tbsp. salt. Cook beans in 2 batches till tender but still a little hard, then lift out. Lay them on a kitchen towel to dry for a minute or possibly so.
  2. Transfer to a bowl. Add in oils, shallot, tarragon and walnut pcs. Toss and season to taste with salt and pepper. Add in a little vinegar just before serving. Serve hot.
