Green Chili Chicken Enchiladas

Ingredientes

  • 8 med Flour tortilla, room
  • 4 1/2 ounce Green chiles
  • 10 ounce Chicken breast, cooked
  • 1 c. Mozzarella cheese, part skim lowfat milk, shredded
  • 1/2 c. Lowfat milk
  • 1/2 med Onion
  • 1 ounce Cooking sherry
  • 8 Tbsp. Lowfat sour cream, fat free
  • 1 c. Healthy Request cream of chicken soup
  • 2 ounce Chicken broth, low sodium

Direcciones

  1. Saute/fry onion in teflon pan. Add in cooking sherry, 1/2 can green chilies, 1/2 c. soup, 1/2 c. lowfat milk, and chicken. Heat till thoroughly heated, 1-3 min. Place 2 Tbsp. filling in middle of each tortilla and roll.
  2. Place seam side down in baking dish which has been sprayed with cooking spray. Continue with remaining tortillas. Heat 1/2 c. soup, chicken broth, remaining chilies, cheese, and lowfat sour cream to make sauce. Pour hot sauce over filled tortillas. Cover baking dish with foil and bake for 20 min in 350 oven.
