Green Herbed Rice

Ingredientes

  • 3/4 c. minced fresh parsley
  • 1/4 c. minced fresh basil
  • 2 tbsp. minced green scallion tops
  • 1/4 c. extra virgin olive oil (approx.)
  • 3 c. cooked long grain rice, heated
  • Salt and fresh grnd pepper to taste
  • 1 tbsp. unsalted butter
  • Freshly grated Parmesan cheese, for garnish

Direcciones

  1. Put parsley, basil and onion tops in food processor. With machine running, add in just sufficient oil through food tube to make a smooth puree.
  2. Toss pureed mix into warm rice with salt, pepper and butter. Serve immediately or possibly keep hot in 225 degree F. oven. Sprinkle with cheese before serving. Serves 4.
