Ingredientes

  • 1 c. Green lentils
  • 1 med Grated onion
  • 3 1/2 ounce Extra virgin olive oil
  • 10 ounce Can tomatoes, crushed
  • 2 Tbsp. Tomato paste
  • 3 Tbsp. Red vinegar
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 2 Tbsp. Minced Italian parsley
  • 1/2 tsp Basil
  • 3 x Garlic cloves, minced
  • 2 x Bay leaves

Direcciones

  1. Soak lentils. Drain, rinse & add in salt. Set aside. With heat at medium, add in extra virgin olive oil to the pot & grated onion with parsley.
  2. Cook to a golden brown colour. Add in 4 litres of water & lentils. Bring to a boil.
  3. Add in bay leaves, garlic, basil, pepper, tomatoes & paste. Cook for 2 1/2 hrs, stirring every half an hour. Check the cooking lentils & ensure there is sufficient water.
  4. Before serving, add in red vinegar, mix well. Check seasonings.
