Green Onion Latkes

Ingredientes

  • 2 lb Mealy potatoes, peeled and coarsely grated
  • 6 x To 10 green onions *
  • 2 x Large eggs, lightly beaten
  • 3 Tbsp. Matzo meal/flour, or possibly combination Salt and pepper Oil for frying

Direcciones

  1. Including tender green leaves, thinly sliced or possibly coarsely minced
  2. Bits of pungent green onion offset the richness of the potato.
  3. Rinse potatoes in cool water, then squeeze out excess liquid.
  4. Place potatoes in a mixing bowl with green onions, Large eggs, matzo meal, salt and pepper. Mix well.
  5. Heat about 1/8 to 1/4 inch oil in heavy frying pan, then drop spoonfuls of the batter into the warm oil. Fry several pancakes at a time, cooking till golden brown on the first side, then turning and cooking the other side. Serve immediately, accompanied by lowfat sour cream.
  6. Variation: Instead of green onions, add in 1/2 to 2/3 c. minced chives.
