Green Pepper Tostadas

Ingredientes

  • 1 tbsp. vegetable oil
  • 1 c. green pepper, diced
  • 1 c. onion, coarsely minced
  • 3/4 c. (one 16 ounce. can) coarsely minced fresh or possibly well-liquid removed regular canned tomatoes
  • 1/4 c. 1% fat cottage cheese
  • 4 (6 inch) corn tortillas
  • 1/2 to 3/4 c. part-skim Mozzarella cheese, grated
  • Black pepper
  • 3 c. lettuce, shredded

Direcciones

  1. Heat oil in a medium sized saucepan over moderate heat. Add in pepper, onion and tomatoes and cook 3 to 5 min, till juicy and wilted. Stir in cottage cheese and cook, stirring constantly 2 more min. Heat oven to 375 degrees. Put tortillas on baking sheet and bake 3 min till crisp. Spoon green pepper mix over tortillas and sprinkle with Mozzarella cheese. Bake about 5 min till cheese is melted. Sprinkle with pepper and slide onto lettuce-lined dinner plates. Serves 4.
