Receta Green salad with Hummus and Lime dressing
Ingredients
- 1/2 Tbsp Butter
- 1 tsp Cumin seeds
- 1/2 Cup Cooked Rice, white or brown
- 1 Tbsp Olive oil
- 8-10 cubesExtra firm tofu cubes
- 4-5 Garlic cloves, sliced
- 1 Medium sized Onion finely sliced
- 8-10 Asparagus stems
- 5-6 Broccoli florets
- 1 Cup Pea shoots
- For the Dressing
- 1 Tbsp Olive oil
- 1 Tbsp Hummus
- 1.5 tsp Red Chilli powder or Paprika
- 1 tsp Lime juice
Instructions
Blanch the broccoli and asparagus. Keep aside.
Heat butter in a pan over medium heat and add the cumin seeds. Once they sizzle and brown a bit, pour this over the rice and mix.
In the same pan add olive oil and sear the tofu on both sides over medium heat. Drain and keep aside.
Add little more oil if needed and add the onions and garlic and stir until the onions turn pink. Keep stirring it so that the garlic does not burn.
Then add the pea shoots, give a quick stir. Add the blanched veggies, tofu, salt and pepper. Mix well and adjust for seasoning, turn off the flame.
In another small pan heat a tsp of olive oil. Once it becomes hot, turn off the flame and add the red chilli powder. Quickly pour this in a bowl with hummus and lime juice. Add salt and check for seasoning. Adjust the spice level according to your preference.
Pour the dressing over and mix well.
