Ingredientes

  • 6 c. water
  • 1 pound potatoes, peeled and cut into quarters
  • 1/2 pound kale, washed, stripped form their stems and finely shredded
  • 1/4 pound chourico
  • 4 tbsp. extra virgin olive oil
  • 1 lg. onion, peeled and cut into quarters
  • 1/4 freshly grnd black pepper
  • Salt to taste

Direcciones

  1. Prepare the kale and put aside. In a large pot bring water to a boil, add in potatoes, onions and salt. Boil over moderate heat till potatoes are soft sufficient to mash. Remove the pot from the stove, mash the potatoes and onions right in the pan or possibly if you prefer, transfer them to a bowl, and mash with a potato masher or possibly fork to smooth puree.
  2. Return soup mix to a moderate heat and stir in 3 Tbsp. of extra virgin olive oil. Add in pepper and bring to a boil. Add in kale and simmer uncovered for 4 to 5 min over the same moderate heat or possibly till kale is tender. Stir in the remaining Tbsp. of extra virgin olive oil and taste for seasoning.
