Ingredientes

  • Four 1-pint canning jars
  • 7 lb Green tomatoes
  • 1 c. Coarse salt -- non-iodized
  • 4 c. Cider vinegar
  • 2 c. Sugar
  • 4 tsp Whole cloves
  • 4 tsp Mace -- whole
  • 2 x Cinnamon sticks

  1. You will need 1 gallon sliced tomatoes for this recipe; about 7 pounds of green tomatoes are sufficient.
  2. Wash, remove stem ends and slice sufficient tomatoes to yield 1 gallon.
  3. Place half the sliced tomatoes in a large bowl, sprinkle with 1/2 c. coarse salt, add in remaining tomatoes and sprinkle with remaining 1/2 c. salt. Cover and set aside overnight.
  4. Drain tomatoes very thoroughly; throw away liquid. Heat 4 c. vinegar and 2 c. sugar to boiling in a heavy saucepan or possibly kettle. Stir till sugar is dissolved.
  5. Make a spicebag by cutting a double thickness of cheesecloth into a 10-inch square. Place the cloves, mace, and cinnamon, that has been broken into smaller pcs, onto the cheesecloth. Tie the corners to secure spices from becoming loose.
  6. Add in spice bag to warm vinegar mix; add in liquid removed tomatoes and simmer for 10 min.
  7. Immediately pack into liquid removed, sterilized jars; seal tightly.
  8. Yield: About 4 pints pickles.
