%3C/p%3E%3Cp%3EMar%204,%202015%20by%20Katie%20Kimball%20@%20Kitchen%20Stewardship%203%20Comments%3C/p%3E%3Cp%3ETen%20years%20ago,%20I%20told%20one%20of%20my%20third%20graders%20that%20she%20couldn%E2%80%99t%20possibly%20be%20allergic%20to%20food%20coloring.%3C/p%3E%3Cp%3EIt%20was%20March%202nd,%20Dr.%20Seuss%E2%80%99s%20birthday,%20and%20I%20had%20gotten%20eggs%20in%20green%20shells%20from%20a%20hobby%20farmer%20and%20thought%20it%20would%20be%20hilarious%20to%20add%20green%20food%20coloring%20and%20play%20it%20up%20like%20the%20green%20eggs%20were%20actually%20green%20eggs%20on%20the%20inside%20too.%3C/p%3E%3Cp%3EMy%20student%20kept%20asking%20if%20it%20was%20really%20green%20food%20coloring%20because%20she%20was%20allergic,%20and%20I%20told%20her%20she%20must%20have%20been%20mistaken,%20that%20people%20aren%E2%80%99t%20allergic%20to%20food%20coloring,%20but%20that%20of%20course%20she%20didn%E2%80%99t%20have%20to%20eat%20it%20if%20she%20wasn%E2%80%99t%20interested.%3C/p%3E%3Cp%3EI%20still%20feel%20guilty%20about%20that.%3C/p%3E%3Cp%3EOh,%20if%20I%20knew%20then,%20what%20I%20know%20now!%3C/p%3E%3Cp%3EI%E2%80%99m%20guessing%20in%20hindsight%20that%20food%20coloring%20negatively%20impacted%20her%20behavior%20so%20her%20mom%20had%20asked%20her%20to%20avoid%20it%20and%20offered%20the%20excuse%20of%20%E2%80%9CI%E2%80%99m%20allergic,%E2%80%9D%20to%20explain%20it%20to%20imbeciles%20like%20ME%20who%20didn%E2%80%99t%20know%20any%20better%20and%20weren%E2%80%99t%20really%20listening%20anyway.%3C/p%3E%3Cp%3ESigh.%3C/p%3E%3Cp%3ENow%20I%20know%20about%20the%20many%20potential%20hazards%20of%20artificial%20colors%20for%20kids%20and%20wouldn%E2%80%99t%20dream%20of%20adding%20it%20to%20food,%20nor%20would%20I%20ever%20do%20a%20food-based%20activity%20without%20warning%20parents%20in%20advance%20(if%20I%20was%20still%20a%20teacher).%3C/p%3E%3Cp%3EBesides%20that,%20it%E2%80%99s%20not%20like%20it%E2%80%99s%20that%20hard%20to%20make%20things%20green%20without%20the%20help%20of%20food%20scientists%20and%20a%20little%20bottle%20that%20will%20stain%20your%20fingers%20for%20five%20days.%3C/p%3E%3Cp%3EThis%20recipe%20has%20been%20posted%20before%20with%20the%20%E2%80%9Cgreen%E2%80%9D%20as%20an%20option;%20for%20St.%20Patrick%E2%80%99s%20Day%20fun,%20it%E2%80%99s%20a%20must.%20And%20don%E2%80%99t%20we%20all%20need%20to%20have%20a%20little%20fun%20in%20the%20kitchen%20sometimes,%20since%20we%20probably%20spend%20five%20thousand%20hours%20a%20day%20in%20there?%3C/p%3E%3Cp%3EYou%20betcha.%3C/p%3E%3Cp%3EAnd%20these%20veggie-laden%20%E2%80%9Clatke%E2%80%9D%20potato%20pancakes%20make%20a%20hearty%20breakfast%20or%20side%20dish%20at%20any%20meal.%20(If%20making%20for%20breakfast,%20you%20can%20grate/shred%20the%20vegetables%20in%20advance%20the%20night%20before.)%3C/p%3E%3Cp%3EYum:%3C/p%3E%3Cp%3EPotato%20Vegetable%20Pancakes%20%20%20%20Author:%20Katie%20Kimball%20Serves:%2015%20pancakes%20%20%20Ingredients%3C/p%3E%3Cp%3E3%20large%20potatoes%20(about%204%20cups%20worth,%20shredded)%202-3%20cups%20shredded%20sweet%20potato%20optional%20other%20veggies%20-%20you%20can%20replace%20some%20of%20the%20white%20potatoes%20with%20zucchini,%20carrots,%20or%20other%20root%20vegetables.%20a%20few%20BIG%20handfuls%20of%20spinach%203%20eggs%202%20Tbs.%20flour%20(any%20-%20white,%20whole%20wheat,%20brown%20rice,%20ETC.)%201%20medium%20onion%201%20tsp.%20salt%20oil%20for%20frying%20(refined%20coconut%20oil%20is%20excellent)%20%20%20Instructions%3C/p%3E%3Cp%3EWash,%20peel%20(optional)%20and%20grate%20the%20raw%20potatoes%20(all).%20I%20use%20a%20food%20processor!%20Salt%20the%20gratings%20and%20allow%20to%20sit%20for%2010-60%20minutes%20(depending%20on%20how%20long%20you%20have%20before%20the%20meal),%20then%20drain%20the%20excess%20water%20that%20accumulates%20at%20the%20bottom%20of%20the%20bowl.%20If%20you're%20hurrying%20and%20must%20skip%20this%20step%20entirely,%20the%20pancakes%20will%20survive.%20Food%20process%20(with%20the%20regular%20blade)%20or%20finely%20chop%20onion%20and%20add%20to%20shredded%20veggies.%20Food%20process%20the%20spinach%20and%20mix%20it%20in.%20Beat%20eggs%20well%20and%20add%20to%20the%20bowl%20(or%20just%20beat%20on%20top%20and%20then%20mix%20in).%20If%20it's%20green,%20you're%20good%20to%20go!%20Add%20salt%20and%20flour.%20Mix%20well.%20Heat%20oil%20in%20frying%20pan%20or%20electric%20griddle%20at%20about%20350F.%20I%20love%20my%20cast%20iron%20griddle%20(found%20on%20Amazon)%20and%20use%20it%20multiple%20times%20a%20day.%20Spoon%20potato%20mixture%20into%20hot%20oil%20and%20flatten%20with%20spoon%20or%20spatula%20to%20create%203-4%E2%80%9D%20circles.%20Add%20a%20spoonful%20of%20the%20liquid%20that%20collects%20at%20the%20bottom%20of%20the%20mixing%20bowl%20right%20in%20the%20center.%20It's%20mostly%20egg%20and%20will%20remind%20you%20of%20a%20fried%20egg%20around%20the%20edges%20of%20the%20pancake.%20This%20helps%20to%20hold%20everything%20together%20nicely%20so%20you%20don't%20end%20up%20just%20making%20veggie%20hashbrowns.
