Ingredientes

  • 1 lb fresh okra sliced
  • 1/4 c. butter or possibly margarine plus
  • 2 Tbsp. butter or possibly margarine melted, divided
  • 1/4 c. all-purpose flour
  • 1 bn green onions sliced
  • 1/2 c. minced celery
  • 2 x garlic cloves chopped
  • 2 quart water
  • 1 can whole tomatoes - (16 ounce) undrained, minced
  • 1 Tbsp. minced fresh parsley
  • 1 1/2 tsp salt
  • 1/2 tsp grnd red pepper
  • 1 sprg fresh thyme
  • 1 x bay leaf
  • 1 lb unpeeled medium-size fresh shrimp
  • 1/2 lb fresh crabmeat liquid removed, flaked Warm cooked rice Gumbo file (optional)

Direcciones

  1. Cook okra in 2 Tbsp. butter in a large skillet over medium-high heat, stirring constantly, till lightly browned. Set aside.
  2. Combine remaining 1/4 c. butter and flour in a large Dutch oven; cook over medium heat, stirring constantly, till roux is chocolate colored (20 to 25 min). Stir in green onions, celery, and garlic; cook, stirring constantly, till vegetables are tender. Add in okra, water, and next 6 ingredients. Bring to a boil; reduce heat, and simmer, uncovered, 2 hrs, stirring occasionally.
  3. Peel and devein shrimp; add in shrimp and crabmeat to okra mix. Simmer an additional 10 min, stirring occasionally. Remove and throw away bay leaf. Serve gumbo over rice. Add in gumbo file, if you like.
  4. This recipe yields 2 1/2 qts.
  5. Yield: 2 1/2 qts
