Grill Roasted Asparagus With Slivered Garlic

Ingredientes

  • 1 1/2 lb asparagus ends trimmed
  • 2 lrg or possibly 4 small garlic cloves peeled, and thinly sliced
  • 2 Tbsp. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Prepare the grill for indirect cooking. If you have a charcoal grill, build the fire on one side of the grill, or possibly around the sides of the grill, leaving an empty space in the middle. For a gas grill, if it has controls for the left and right, heat one side. If you have front and back burners, heat the back.
  2. Make a rimmed baking pan out of a double thickness of heavy-duty aluminum foil. The pan should be just large sufficient to hold all the asparagus in a single layer and fit comfortably on the part of the grill away from the heat.
  3. In a shallow dish, combine the asparagus, garlic, oil and salt and pepper to taste. Toss to coat. Transfer the mix to the rimmed baking pan. Place the pan on the grill over indirect heat.
  4. Cover the grill and cook the asparagus, maintaining the temperature inside the grill at about 350 degrees, till the asparagus is tender and its skin slightly wrinkled, turning the asparagus once or possibly twice during the cooking to help them roast proportionately.
  5. The asparagus should take 15 to 25 min to cook, depending on the thickness of the stalks and the heat inside the barbecue. Serve immediately.
  6. This recipe yields 4 servings.
  7. Comments: The direct heat of the grill tends to char the outside of the stalks before the insides are cooked. To get around this problem, roast the asparagus over indirect heat on a disposable baking pan made from aluminum foil. The asparagus cooks without burning and is able to absorb just the right amount of grill flavor. Here, thin slices of garlic cook with the asparagus. Protected from the fire, the garlic slices become golden and sweet.
