Ingredientes

  • 1 lb albacore loin cuts - (to 1 1/2 lbs)
  • 2 tsp Dijon mustard
  • 1/3 c. lime juice
  • 1/4 tsp salt
  • 3 x garlic cloves pressed
  • 2 Tbsp. vegetable oil
  • 1/4 c. beer
  • 1 x ripe avocado cut into slices
  • 1 Tbsp. minced parsley
  • 1/2 tsp cumin Freshly-grnd black pepper to taste
  • 2 med tomatoes peeled, seeded
  • 2 dsh liquid warm pepper sauce - (to 3)
  • 1/4 c. minced red onion
  • 3 Tbsp. diced green chilies Salt to taste

Direcciones

  1. Rinse albacore with cool water; pat dry with paper towels. Set aside.
  2. Combine remaining ingredients except salsa and avocado; pour over albacore. Cover and marinate in refrigerator for 1 hour, turning once. While albacore is marinating, make salsa.
  3. Drain albacore reserving marinade. Place on well-greased grate 4 to 5 inches from warm coals. Cook 4 to 5 min; baste with marinade and turn. Cook an additional 4 to 5 min, or possibly till albacore flakes when tested with a fork. Top with avocado slices and Salsa.
  4. Salsa: Combine all ingredients and blend well. Let stand at room temperature or possibly in refrigerator for 15 to 20 min to blend flavors. (Makes approximately 1 1/4 c. sauce)
  5. This recipe yields 4 servings.
