Last Wednesday was an 'interesting' day.

Today I got the icing on the cake; the cherry on the sundae; the grand slam; the crowning achievement....

I got a speeding ticket.

In the mail.

From... you guessed it: last Wednesday.

I know exactly when it happened. I saw the flash.

I was just hoping that it was for someone in the other lane.

I hoped in vain.

There's no excuse for it. I was careless... One could even say stupid.

We have traffic cameras here. Everywhere.

By law there is always a warning sign posted about 1 km before the camera, along with the speed limit.

There's no way one can argue ignorance.

In my defense:

The camera was on the right exactly where a motorway splits. I was going left.

The speed limit rapidly decreases from 130kph to 90kph.

Traffic was very heavy and I was going with the flow, neither faster nor slower than anyone else.

I was cited for doing 98kph in a 90kph zone (59mph in a 55mph)

On the positive side I get a 30% discount on the ticket if I pay in 15 days.... And I can pay on line.

Oh, and the ticket is actually issued to mon mari as the car is registered to him.

I was in my way to visit him in hospital, of course.

I forgot to tell you about my dental appointment - also last Wednesday.

It was just a teeth cleaning.

The good: It only took 15 minutes; it only cost $35.00; my teeth were squeaky clean.

The bad: I felt like my teeth had been sand-blasted with rock salt; I had a sheen of salt all over my face and shirt.

The different: I didn't get a gentle polishing or a flossing and no one probed the gaps between teeth and gums.

The bizarre: Washing my face that evening resulted in an impromptu exfoliating facial.

Now....

About those lovely orange tomatoes...

They do seem to work well with the Salmon Lasagne. I could see using the chopped yellow tomatoes with Butternut Squash Lasagne.

This is my favorite late summer lasagne. The nights get cool enough to turn on the oven but I can still get mon mari to smoke the salmon for me.

Grill the salmon until just done, still pink in the middle - or poach lightly in a skillet. Either way it will take 10 - 15 minutes.

Make sauces:

Finely chop onion and garlic. Heat the oil in a medium saucepan over medium heat. Add onions and garlic and sauté for 5 minutes or until tender. Add crushed tomatoes, herbs and red wine. Cover, reduce heat and let simmer until needed.

In a medium saucepan heat the butter over low heat. Add flour and stir with a whisk for 1 minute. Add a little (1/4 cup) of the milk and whisk to combine. Turn heat up to medium and keep adding milk, a little at a time and whisking. You should have added all of the milk in a minute or 2. When all of the milk is in bring to a boil (should almost be there), whisking. Then remove from heat. Congratulations! You have just made a béchamel sauce! Allow to cool for 5 minutes then stir in cheddar cheese.

Remove salmon from grill or poaching liquid, skin if necessary and break up into flakes. Roughly chop smoked salmon. Remove tomato sauce from heat, add all salmon and yogurt.

To assemble: in an oblong baking dish, 8 x 10, (20 x 25cm) or so...make the following layers

1/3 tomato/salmon sauce

3 - 4 noodles, ( you may have to break one up to get good coverage)

1/3 cheese sauce

1/3 tomato/salmon sauce

3 - 4 noodles

1/3 cheese sauce

1/3 tomato/salmon sauce

3 - 4 noodles

1/3 cheese sauce

Parmesan

Cover and bake 400F (200C) for 30 minutes, or until noodles are done. Test in center with a sharp knife. Uncover and bake 5 minutes longer to brown cheese. Remove and let rest for 5 minutes. Cut into squares (or oblongs) and serve.
