Ingredientes

  • 1/4 c. Fresh lemon juice
  • 1/2 c. Extra virgin olive oil
  • 1 Tbsp. Capers
  • 1 Tbsp. Finely-minced parsley Freshly-grnd black pepper to taste
  • 12 med Asparagus spears tough end removed
  • 2 Tbsp. Extra-virgin extra virgin olive oil Salt to taste
  • 12 slc Prosciutto - (thin slices)
  • 12 x Thinly-shaved pcs of Pecorino Romano cheese

Direcciones

  1. Whisk together the lemon juice and extra virgin olive oil in a small bowl. Add in the capers and parsley and season with black pepper.
  2. Preheat grill.
  3. Grill the asparagus, brushed with extra virgin olive oil. Toss the asparagus with the extra virgin olive oil and season with salt and pepper to taste. Wrap a piece of prosciutto around each spear and place on a platter. Drizzle with lemon-caper vinaigrette and top with the cheese.
