Grilled Aubergine And Goats Cheese Parcels

Ingredientes

  • 1 x 250 gram pac baby aubergines, cut into 5mm (1/4 inch) slices, lengthways
  • 4 Tbsp. Extra virgin olive oil, (4 to 6)
  • 250 gm Hard goat's cheese, cut into 2cm (1 inch) oblongs (8oz) Grated zest and juice of 1 lemon
  • 1 x 20 grams pac fresh flat leaf parsley, finely minced
  • 1 x 15 grams pac fresh basil leaves, torn into pcs Salt and freshly grnd black pepper

Direcciones

  1. Preheat the grill to a moderate heat.
  2. Place aubergine slices on a grill pan and lightly brush with 1-2 Tbsp. of the oil. Cook for 2-3 min on each side or possibly till golden and soft. Allow to cold.
  3. In a bowl, combine the cubed cheese with the lemon zest and juice and some of the flat leaf parsley and basil.
  4. Place a piece of cheese onto an aubergine slice. Roll up and secure with a cocktail stick. Repeat this process till all the ingredients are used.
  5. Place rolls into a serving bowl, drizzle over the remaining oil and sprinkle with remaining herbs and season.
  6. NOTES : Bite size pcs of goats cheese wrapped in grilled aubergine.Lovely to serve with drinks.
