Grilled Avocado Jalapeno Corn

Ingredientes

  • 5 Ears fresh corn
  • 2 Peeled and rinsed tomatillos
  • 1 Jalapeno
  • 1 Avocado halved
  • 1/4 c fresh cilantro
  • 1 tsp. lime juice
  • 1/4 tsp. salt
  • 1 clove garlic

Direcciones

  1. Shuck corn and grill over medium heat with peeled tomatillos, jalapeno and avocado for 5-10 minutes or until lightly charred, turning occasionally.
  2. Remove stem and seeds from pepper and scoop avocado from peel.
  3. Place in a small food processor with tomatillos, cilantro leaves lime juice, sale and garlic and puree until smooth.
  4. Cut corn from cob and stir in avocado mixture.
