Grilled Baby Bok Choy in Lime Marinade
You all know that I am a poor planner. Bu tin this case poor planning will lead to Baby Bok Choy. I have a bad habit of buying food with the intention of making something but then I forget what I want to make. Sometimes I just change my mind. Cynthia from Feeding Big tells me that I need to be more organized. I actually thought that I was organized. Over the years, I have slacked off in this area. When the kids were little I HAD to be organized. Juggling a full-time job outside the home, kids activities, a house to manage, yada yada yada.
I have this dilemma of food that is about to spoil. That’s what happened with a handful of limes sitting in the fruit basket on my counter. I thought they were going to meet their demise. Luckily my CSA basket arrived with a pound of baby bok choy. I already tried roasting bok choy and absolutely loved it. Now I figured that I have to grill it. And, if I use the limes, well they won’t go to waste this time.
Grilled Baby Bok Choy in Lime Marinade
It’s best on a gas grill, using the indirect method, but you can use the stove top too.

Ingredients
- 1 pound baby bok choy, sliced in haf lengthwise
- 1½ teaspoons coarse sea salt
- ⅛ teaspoon pepper
- ½ teaspoon sugar
- the juice of two limes ( about ¼ cup)
- ¼ cup Grapeseed oil
Directions
Preheat your gas grill about 15 minutes
In the meantime, in a shallow bowl, combine the lime juice, 1 teaspoon of the salt, the pepper and the oil.
Place the bok choy in your shallow bowl and sprinkle the remaining salt on the bok choy. Pour the marinade over the bok choy and coat the leafs.
Place on the grill about 3 to 4 minutes per side.
