Receta Grilled Bison Burgers with Peanut Butter and Bacon

The Wisconsin State Fair is upon us once again. Over the next few days, I will be posting some great recipes connected to the "Golden Spork" Awards. The Sporkies is a Wisconsin State Fair food competition that started in 2013.

This is my spin on this surprisingly delicious new burger. Think about it...savory lean bison grilled until medium. Then topped with ground roasted peanuts and two strips of salty bacon. Served on Texas toast and a side of your favorite coleslaw. Perfection!

  • 1 1/2 Lbs. Ground Bison
  • 1 Tsp. Fresh Thyme or 1/4 Tsp. Dried
  • 1 Small Shallot, Minced
  • 2 Tbsp. Worcestershire Sauce
  • 1 Tsp. Spanish Smoked Paprika
  • 2 Tbsp. Montreal Steak Seasoning
  • To Serve:
  • 8 Slices Texas Toast, Toasted
  • 4 Tbsp. Creamy Peanut Butter
  • 8 Thick Sliced Applewood Smoked Bacon, Cooked


  1. In a large bowl, gently combine all the the burger ingredients until well mixed. Form into 4 equally-sized patties that are about an inch or so in thickness.
  2. On a preheated charcoal grill, cook burgers for approximately 3-4 minutes per side, or until cooked to your desired doneness. Keep in mind, bison is a lean red meat and dries out quickly. I do not recommend cooking past medium.
  3. Remove burgers from the grill and let them rest for a few minutes so the juices redistribute.
  4. To assemble: Top each burger with a tablespoon of peanut butter and 2 slices of bacon (that’s been halved and laid on the top of the burger like an X) and sandwich it between the toasty buns.
