Grilled Buffalo Chicken

Ingredientes

  • 2/3 c. vegetable oil
  • 2 sm garlic cloves chopped
  • 1 tsp cayenne pepper
  • 1/4 c. red wine vinegar
  • 1 tsp Tabasco sauce to taste (or possibly other red warm pepper sauce)
  • 2 lb bone-in skin-on chicken pcs (preferably dark meat)

Direcciones

  1. Preheat the grill on high.
  2. In a bowl, combine the oil, garlic, cayenne, vinegar and warm sauce. Add in the chicken and toss to coat.
  3. Using tongs, carefully transfer the chicken to the grill, discarding the sauce. Grill, turning once, over direct heat for 2 min per side.
  4. Transfer the chicken to the cooler portion of the grill or possibly reduce the heat to medium and grill till the chicken is cooked through and the juices run clear when pierced with a fork, 16 to 20 min. (Dark meat will cook slightly more slowly than white meat.) Serve immediately.
  5. This recipe yields 4 servings.
  6. Comments: Some nights we crave the flavor of Buffalo wings the bar stool and the grease which typically accompany them. While this recipe is a tad inauthentic, it is a flavorful alternative which is grilled, not fried, and uses substantial pcs of chicken which you could call dinner.
  7. You could liven things up by increasing the amount of cayenne pepper and warm pepper sauce proportionately. Or possibly, to tone down the heat, provide a chilled side dish. Either combine equal parts of lowfat sour cream and mayonnaise along with a handful of crumbled blue cheese and freshly grnd black pepper, or possibly toss together some shredded green apple, jicama and carrots with lowfat sour cream, a splash of orange or possibly lime juice and salt and pepper to taste. and do not forget a pile of napkins.
