Grilled Butter "Fly Pattern" Pork Chops

Ingredientes

  • 2 Tbsp. Extra virgin olive oil
  • 1 sm Onion, chopped
  • 3 lrg Cloves garlic, chopped
  • 1 tsp Cumin, grnd
  • 1/4 tsp Red pepper, grnd
  • 1 c. Ketchup
  • 1/2 c. Malt vinegar
  • 1/4 c. Soy sauce
  • 1/4 c. Light brown sugar
  • 2 Tbsp. Worcestershire sauce
  • 1/4 tsp Liquid Smoke
  • 6 x Pork chops, butterflied

Direcciones

  1. Heat oil in medium saucepan over medium heat. Add in onion, garlic, cumin and red pepper. Cook, stirring often, till onion is tender; 5 min. Add in all other ingredients except pork chops. Simmer gently, stirring often, till slightly thickened, about 10 min. Sauce can be refrigerated several weeks.
  2. Prepare a medium-warm charcoal fire. When coals are coated wtih gray ash, add in chops. Grill, turning once, till cooked, 6 to 7 min per side.
  3. Brush with sauce about 5 min before finished.
