Receta Grilled Cheese Burrito Bowl

When I heard about the California Dairy Contest for the Recipe Redux, I thought I’m in New Jersey where am I going to find California Cheese? A quick trip to the supermarket revealed that California Dairy Products can be found in New Jersey, and I had purchased them before! While browsing through the selection of California Dairy Cheeses, I was trying to decide what to make for the contest and I spotted the Yanni Grilling cheese.
What a brilliant idea! The grilling cheese is like a grilled cheese sandwich without the bread! Yanni Grilling Gheeses are firm, and when grilled they form a crust on the outside and become soft in the middle. The texture makes them perfect for serving in salads, as an appetizer or a bread-less grilled cheese sandwich. That’s when I thought Burrito Bowl!
I enjoy making burrito bowls at home, they are filling and you can lighten them up when you make them yourself. I usually fill the bowls with fresh lettuce, veggies, rice, beans, grilled meat and cheese. I knew the California Yanni Grilling Cheese would be the perfect ingredient. I didn’t even add meat, since the cheese provides enough protein.
Grilled Cheese Burrito Bowl
INGREDIENTS
- For the Salsa: (can also use salsa in a jar)
- 1 Pint of grape of cherry tomatoes coarsely chopped
- 1/2 Red onion diced
- 1 Clove of garlic crushed
- 1 Jalapeno pepper
- Juice of 1/2 of a lime
- 1 Tablespoon olive oil
- 1/2 Teaspoon of cumin
- For the Burrito Bowls:
- 1 Cup cooked brown rice
- 1 Can or 1 1/2 cups of black beans
- 1 Tablespoon Olive oil
- 1 Red bell pepper sliced in strips
- 1 Green bell pepper sliced in strips
- 1 Medium onion - sliced
- 1 Avocado sliced
- 1 Large or two small heads of romaine lettuce
- 1 package of California Yanni Jalapeno Grilling Cheese
- California Wallaby Greek Yogurt for garnish
INSTRUCTIONS
For the salsa:
Combine all ingredients in a bowl and refrigerate.
For the Burrito Bowls:
Add Olive Oil to a frying pan and add the peppers and onions, saute until they become soft
Remove from pan and set aside
Slice the block of California Yanni Cheese in half horizontally so that it is half the size in thickness
Place on pre-heated grill or grill pan and cook for approximately 5 minutes or until a brown grill lines appear and there is a bit of a crust on the outside
Turn the California Yanni Cheese over and cook for another 5 miniutes or until grill lines appear.
Set aside to cool for a few minutes.
Meanwhile begin to assemble the bowls in each bowl . . .
Add 1/4 to 1/2 Cup of rice to the bottom of the bowl
Next add 1/4 to 1/2 Cup of beans, then top with a large handful of lettuce, then the peppers and onions, and avocado
Slice the California Yanni Cheese into 1/4 inch pieces and place two to three pieces of cheese on top of each bowl.
Add some salsa and a dollop of California Wallaby Greek Yogurt
