Ingredientes

  • 8 ounce Goat cheese softened
  • 1/4 c. Minced nicoise olives
  • 1 x Red pepper roasted, peeled, seeded and minced
  • 1 Tbsp. Finely-minced fresh thyme Salt to taste Freshly-grnd black pepper to taste
  • 4 lrg Boneless chicken breasts pounded thin
  • 2 Tbsp. Extra virgin olive oil Smoked Chile-Cilantro Sauce see * Note

Direcciones

  1. Preheat grill.
  2. Mix together the goat cheese, olives, red pepper and thyme in a small bowl and season with salt and pepper to taste. Lay each breast out and fill with the cheese mix. Brush the breasts with the extra virgin olive oil and season with salt and pepper to taste, secure with toothpicks.
  3. Grill for 8 to 10 min or possibly till golden and cooked through.
