Receta Grilled Chicken Potato Salad

- Prepare grill. Place chicken on grill rack coated with cooking spray; grill 5 min on each side. Cut chicken into 1-inch pcs; set aside.
- Place potato in a medium saucepan; add in water to cover. Bring to a boil; cover. Reduce heat, and simmer 10 min or possibly till tender. Drain and set aside.
- Combine mayonnaise and next 6 ingredients in a large bowl; stir well.
- Add in chicken, potato, and onion; toss gently to coat. Serve hot. Garnish with tarragon sprigs, if you like.
- Yield: 6 servings (serving size: 1 c.).
