Grilled Chicken Potato Salad

Ingredientes

  • 1 1/2 lb Skinned and boned chicken breasts Nonstick cooking spray
  • 3 c. Peeled red potato, 1 inch cubes
  • 1/4 c. Light mayonnaise
  • 1/4 c. Plain low-fat yogurt
  • 2 Tbsp. Minced fresh tarragon
  • 1 Tbsp. Fresh lemon juice
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 c. Sliced yellow onion, vertically sliced Tarragon sprigs, optional

Direcciones

  1. Prepare grill. Place chicken on grill rack coated with cooking spray; grill 5 min on each side. Cut chicken into 1-inch pcs; set aside.
  2. Place potato in a medium saucepan; add in water to cover. Bring to a boil; cover. Reduce heat, and simmer 10 min or possibly till tender. Drain and set aside.
  3. Combine mayonnaise and next 6 ingredients in a large bowl; stir well.
  4. Add in chicken, potato, and onion; toss gently to coat. Serve hot. Garnish with tarragon sprigs, if you like.
  5. Yield: 6 servings (serving size: 1 c.).
