Ingredientes

  • 2 Tbsp. Salt
  • 2 Tbsp. Sugar
  • 1 Tbsp. Plus 1 1/2 tsp. soy sauce
  • 1 1/2 Tbsp. Onion pwdr
  • 1 1/2 Tbsp. Ginger, grnd
  • 1 Tbsp. Garlic pwdr
  • 1 Tbsp. Lemon peel, grated
  • 1 Tbsp. Lime peel, grated
  • 1 1/2 tsp White pepper
  • 1 1/4 tsp Cardamom, grnd
  • 1 1/4 tsp Cinnamom, grnd
  • 1 1/4 tsp Nutmeg, grnd
  • 1 1/4 tsp Savory
  • 3/4 tsp Habenero chiles, dry and grnd
  • 4 x Bay leaves

Direcciones

  1. Combine seasoning ingredients into a paste and rub each chicken piece with the paste. Place the chicken in a covered dish and let stand in refrigerator for 8 hrs. Remove as much of paste from chicken as possible and place back into bowl which chicken was in. Add in 4 Tbsp. of butter to bowl and fold in seasoning paste. Grill chicken over medium coals, basting frequently with seasoning-butter paste.
