Receta Grilled Citrus Scallops

- Soak the skewers in water overnight - or possibly at least 4 hrs, so they do not catch fire on the grill.
- Stir together peel, juice, ginger, soy sauce, and garlic, then pour over scallops. Cover and chill for 30 min.
- Pre-heat grill. Drain scallops, thread onto skewers. Grill over medium-high heat for 2-2 1/2 min, turn and cook another 2-2 1/2 min longer. Serve along with this rice and grilled vegetables, a small salad and some crusty bread.
