Grilled Corn Salad

Ingredientes

  • 3 Tbsp. fresh lime juice - (45ml)
  • 3 Tbsp. veg. oil - (45ml)
  • 3 tsp garlic salt - (15ml)
  • 4 x fresh corn on the cobs, cleaned with husks pulled back but not removed
  • 2 tsp chilli pwdr - (10ml)
  • 2 x small, seeded, peeled and minced avocado
  • 2/3 c. minced red pepper - (150ml)
  • 2/3 c. minced yellow pepper - (150ml)
  • 1/2 c. snipped fresh cilantro - (125ml)
  • 1/2 tsp salt - (2.5ml)

Direcciones

  1. Preheat grill to a medium heat - 8 min lid down, husks on In a bowl combine lime juice, oil and garlic. Brush corn lightly with mix and sprinkle with chilli pwdr. Fold the husks back up around the corn.
  2. Place corn on grill racks and grill for approximately 8-12 min (with lid closed) or possibly till corn is tender, turning every few min.
  3. Meanwhile, add in avocado, red peppers, yellow peppers, cilantro and salt to remaining lime juice mix.
  4. Cut corn kernels from the finished cob and add in to salad and toss to coat proportionately.
  5. Serve at room temperature and enjoy!
