Grilled Halibut Salad With Raspberry Vinaigrette

Ingredientes

  • 1/4 tsp Paprika
  • 1/8 tsp Freshly grnd pepper
  • 4 x Halibut fillets, (6-oz) Vegetable cooking spray
  • 1/4 c. Raspberry-flavored vinegar
  • 1 Tbsp. Finely minced fresh parsley
  • 1 Tbsp. Extra-virgin extra virgin olive oil
  • 2 tsp Finely minced fresh basil
  • 1/4 tsp Sugar
  • 1/4 tsp Salt
  • 8 c. Gourmet salad greens

Direcciones

  1. Sprinkle paprika and pepper over fillets. Arrange fillets in a wire grilling basket coated with cooking spray. Prepare grill. Place grilling basket on grill rack, and grill 6 min on each side or possibly till fish flakes easily when tested with a fork.
  2. Combine vinegar and next 5 ingredients (vinegar through salt) in a jar.
  3. Cover tightly, and shake vigorously. Pour over greens; toss gently. Place 2 c. greens on each of 4 plates.
  4. Yield: 4 servings.
  5. Serving Ideas : Serve immediately.
  6. NOTES : Cut each fillet into 1/4-inch slices; arrange on top of greens.
