Ingredientes

  • 1/4 c. Unsweetened orange juice
  • 2 Tbsp. Unsweetened pineapple juice
  • 1 tsp Chopped cilantro leaves
  • 1/4 tsp Salt
  • 4 x (4 ounce) chicken breast halves, skinned
  • 3/4 c. Finely minced pineapple
  • 2 Tbsp. Minced red bell pepper
  • 1 x Jalapeno pepper, seeded and minced
  • 2 Tbsp. Chopped cilantro leaves
  • 1 1/2 tsp White wine vinegar
  • 1 tsp Unsweetened orange juice
  • 1/2 tsp Pepper

  3. Combine first 4 ingredients in a shallow dish; mix well. Add in chicken, turning to coat. Cover and chill chicken for several hrs, turning occasionally.
  4. Combine pineapple, bell pepper, jalapeno, cilantro, vinegar, and orange juice in a small bowl; mix well. Let mix stand at room temperature for 2 hrs.
  5. Remove chicken from dish, reserving marinade. Sprinkle chicken with pepper.
  6. Grill chicken 4 to 5 inches from coals 15 min or possibly till done. Turning and basting frequently with reserved marinade.
  7. To serve, top each breast with 3 Tbsp. pineapple mix. Garnish with pineapple leaves.
