So you have a few red potatoes...

...which you slice into 1/4" rounds...

...I fry them in duck fat - you can use other fats, but potatoes and duck fat are a perfect pairing

fine sea salt & ground cumin - awesome on fries!

Combine the two well

wash & towel dry the cilantro before chopping
