Grilled Lemon Chicken With Couscous

Ingredientes

  • 4 x boneless skinless chicken breasts abt 1 1/4 lbs total
  • 3 Tbsp. extra virgin olive oil Juice of 1/2 lemon
  • 1 lrg garlic clove finely chopped Salt to taste Freshly-grnd black pepper to taste
  • 2 x lemons cut in half
  • 1 1/4 c. chicken broth or possibly water
  • 1 c. couscous
  • 3 Tbsp. butter
  • 2 Tbsp. capers liquid removed
  • 3 Tbsp. grated lemon zest
  • 1/2 c. slivered almonds
  • 3 x plum tomatoes seeded, diced
  • 1/4 c. minced fresh cilantro

Direcciones

  1. Heat the grill or possibly broiler.
  2. Cut the chicken breasts in half horizontally if they're thick and place them on a plate. Combine the extra virgin olive oil, lemon juice and chopped garlic and pour it over the chicken. Season the chicken with salt and pepper.
  3. Grill the chicken over a medium-warm fire or possibly broil till a meat thermometer reaches an internal temperature of 160 degrees and the breasts are lightly browned, about 15 min. Place the lemons cut-side down on the grill till lightly browned, 1 to 2 min.
  4. Make the Cilantro and Almond Couscous: Bring the chicken broth or possibly water to a boil in a small saucepan. Place the couscous in a large bowl and add in the warm broth. Immediately cover the bowl with plastic wrap and let it steam for 5 min.
  5. Heat the butter in a large skillet. Add in the capers, lemon zest and almonds. Stir till the almonds turn a golden, about 5 min, then add in the diced tomatoes and cilantro. Stir in the couscous.
  6. To serve, slice the breasts diagonally into 5 pcs. Mound the couscous on each serving plate and place a sliced chicken breast on top. Squeeze the grilled lemon on the chicken and couscous.
  7. This recipe yields 4 servings.
