Grilled London Broil with Roasted Onions

We all have something we hate about our bodies. It shouldn’t be that way, but that is reality.

I am getting back to a nice shape again as I am losing weight, but the thigh area, man I wish there was something you can magically rub on them to make them smaller. Until that is invented, I know I have to include cardio and weight training in my life. I skipped the trail all week because the weather was so hot, but when I got home, I just stared at the treadmill.

When I finally hit the trail five days later, I was not happy about how much I had fallen back.

Sometimes the simplicity of something such as Grilled London Broil with Roasted Onions, can make it all feel better.

Grilled London Broil with Roasted Onions

Ingredients

MEAT INGREDIENTS

Directions

FOR THE MEAT:

Combine all the ingredients in a zip lock bag. Place in the fridge for 2 hours or over night.

Heat your grill for indirect heat.

Remove the meat from the marinade, pat it dry, and season generously with salt and black pepper to taste.

Lightly oil the grill and sear the meat over high heat for 5 minutes.

Then rotate it (don’t turn it over yet) about 45 degrees from its original spot on the grill.

Once you’ve made your grill mark, flip and repeat on the other side.

Move the steak to the cooler side of the grill, cover with an aluminum pan, and cook, rotating (not flipping) periodically, about 15 to 20 minutes.

Let steak rest on a cutting board about 10 minutes.

In the meantime. Set your oven to 375 degrees F.

Place the Sliced onions, and rosemary springs on a baking sheet

Coat with the oil, vinegar, salt, pepper and brown sugar

Baked for about 30 to 45 minutes, or until nice and tender

A well-balanced meal is definitely key. And as much as I am a chicken lover, there is room in my life for beef. With the weather as warm as it has been, I decided to get my grill on and created a Grilled London Broil and Roasted Onions on the side. You can grill the onions if you want, but I opted for the easy method and roasted them in the oven.

Now I am ready to hit the pavement again. If I could jest get the weather to cooperate with me.

If not, I have to remember, the treadmill is a great alternative.
