- (Watercress can be substituted)
- Pat steaks dry, brush with 1 teaspoon extra virgin olive oil, and grill over medium warm coals. Use remaining 1 teaspoon of extra virgin olive oil to coat the bottom of a skillet.
- Saute/fry onion and garlic with salt and pepper till onion is translucent/soft and garlic has begun to color. Add in tomatoes; cook till they begin to glisten.
- Add in arugula, tossing to blend. Adjust salt and pepper, serve over grilled fish.
