Ingredientes

  • 4 x 6 ounce. mahi mahi steaks
  • 2 tsp Extra virgin olive oil
  • 1 sm Purple onion, thinly sliced
  • 2 x Garlic cloves Salt Freshly grnd pepper
  • 2 lrg Tomatoes peeled, seeded & minced
  • 1 handf minced arugula* (fresh)

Direcciones

  1. (Watercress can be substituted)
  2. Pat steaks dry, brush with 1 teaspoon extra virgin olive oil, and grill over medium warm coals. Use remaining 1 teaspoon of extra virgin olive oil to coat the bottom of a skillet.
  3. Saute/fry onion and garlic with salt and pepper till onion is translucent/soft and garlic has begun to color. Add in tomatoes; cook till they begin to glisten.
  4. Add in arugula, tossing to blend. Adjust salt and pepper, serve over grilled fish.
