Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 1 sm onion finely minced
  • 2 Tbsp. curry pwdr
  • 1 tsp ancho chili pwdr
  • 1 x mango peeled, pitted, and pureed
  • 2 Tbsp. fresh lime juice
  • 1/2 lb unsalted butter - (2 sticks) softened Salt to taste Freshly-grnd black pepper to taste
  • 16 x Maine lobster tails split in half Extra virgin olive oil as needed Salt to taste Freshly-grnd black pepper to taste
  • 8 ounce haricots verts cooked till just tender, shocked in ice water, each bean quartered lengthwise
  • 3 x plum tomatoes halved, seeded, and julienned
  • 1/4 c. roasted unsalted potatoes roughly minced
  • 2 lrg green (unripe) papayas peeled, seeded, and julienned
  • 1/4 c. Thai fish sauce
  • 1/4 c. freshly-squeezed lemon juice
  • 1/4 c. freshly-squeezed lime juice
  • 2 Tbsp. sugar
  • 1 tsp finely-minced garlic
  • 1 tsp red pepper flakes
  • 1/3 c. peanuts
  • 1/4 c. coarsely-minced cilantro

Direcciones

  1. Curry Mango Butter: Heat extra virgin olive oil in a small saucepan over medium heat. Add in onion and cook till soft. Add in curry pwdr and ancho pwdr and cook for 2 min. Add in mango puree and lime juice and cook an additional 5 min. Let cold. Place mango mix in a food processor and add in butter. Process till smooth and season with salt and pepper to taste.
  2. Place a sheet of parchment paper or possibly waxed paper on a work surface. Spread the butter along a long side and form into a roll about 1-inch in diameter, leaving a 1-inch border of paper. Roll up the butter in the paper and chill for at least 30 min.
  3. Lobster Tails: Preheat grill. Brush lobster tails with oil and season with salt and pepper. Place meat-side down and grill 4 to 5 min or possibly till cooked through. Remove from heat and top each tail immediately with a slice of Curry Mango Butter.
  4. Green Papaya Salad: Combine all ingredients except peanuts in a medium bowl till combined. Spoon onto a platter and garnish with peanuts and minced cilantro.
