Receta Grilled Margarita Cilantro Shrimp {Gourmet Garden}

Today I want to share a yummy summer recipe with you. It's definitely hot so we have been grilling quite a bit lately. Isn't that what summer is all about? I for one look forward to utilizing our outdoor grill instead of the oven to cook dinner.
We usually grill beef, pork or chicken and rarely grill seafood or fish. I've been trying to be better at incorporating more seafood into our diets. My daughter loves grilled salmon and my husband and I love shrimp. Shrimp Scampi is one of our favorite dishes, but with all the added butter it can be a little unhealthy.
When Walmart asked me to try out the new line of Gourmet Gardens fresh squeezable herb tubes, shrimp immediately came to mind. I scrolled through their website and found this recipe for Grilled Margarita Cilantro Shrimp that was an instant hit.
I love using fresh herbs to cook with, but I'm not the best at keeping them fresh. Most times I can't even use them before they go bad. By using Gourmet Gardens herbs I've found a nice alternative to fresh herbs and spices.
If you're not familiar with Gourmet Garden here's a little run down. Gourmet Gardens herbs are grown in the rich soil of organic farms on the Sunshine Coast of Australia. Within 24 hours of harvesting they are washed, chopped, blended and packed into tubes to maintain all their fresh taste and nutrition.
I love these handy tubes because they keep their fresh taste for 3 months refrigerated, so there’s no waste. If you want to extend the herbs longer (especially the ones you don't use that often) just store them in the freezer for an additional 3 months. I store mine in a basket in the freezer so I have them in arms reach.
When you want to use them just remove from the freezer, thaw and use. The whole Gourmet Garden line of herbs and spices are priced at around $3.78 and available in the fresh produce section at your local Walmart or supermarket.
To make this recipe you will need 1 - lb uncooked shrimp, de veined and peeled, limeade concentrate, fresh or frozen pineapple chunks, wooden or metal skewers, gourmet garden spices (chili pepper, garlic paste or chunk and cilantro).
Start by peeling the shrimp. The jumbo shrimp I purchased was already de veined, so all I had to do was peel the shell, rinse and set aside.
To prepare the sauce combine the limeade, Gourmet Garden cilantro, garlic and chili pepper. Mix to combine. Thread shrimp onto skewers; brush with marinade. Do the same with the pineapple, but don't brush any of the marinade on. Grill fresh pineapple, 10-12 minutes or frozen 5-8 minutes, covered, turning once. Remove the pineapple and set aside.
Grill shrimp skewers 3-4 minutes or until the shrimp are opaque, turning and brushing with marinade. I used my indoor grill pan and it worked just as well as our outdoor grill. Just add a tiny bit of olive or coconut oil on the pan before adding the shrimp.
Serve the Margarita Shrimp skewers on a bed of white or brown rice, by themselves or on top of your favorite salad.
- Grilled Margarita Cilantro Shrimp
- 1/2 - cup Limeade concentrate, thawed
- 3 - tablespoons Gourmet Garden Cilantro
- 1 - tablespoons Gourmet Garden Garlic
- 1 - tablespoons Gourmet Garden Chili Pepper
- 1 - whole Pineapple, peeled, cut into 1 inch chunks
- 1 lb – uncooked Shrimp, peeled and de veined
Combine limeade, Gourmet Garden Cilantro, Garlic and Chili Pepper. Thread shrimp onto skewers; brush with marinade.
Grill pineapple, 10-12 minutes for fresh or 5-8 for frozen, covered, turning once. Remove pineapple.
Grill shrimp skewers 3-4 minutes or until the shrimp are opaque, turning and brushing with marinade.
Servings: 3
